Batter depth stays consistent when you scale a recipe by the ratio of pan areas. A round pan's area is π × radius²; a rectangular pan's is length × width. For reference: 8″ round ≈ 50 sq in, 9″ round ≈ 64 sq in, 9″×13″ ≈ 117 sq in. Multiply the recipe by the new-to-original area ratio.
